Christmas burgers

6 burgers


  • 200g good quality sausages, skins removed

  • 4 spring onions

  • 2 cloves of garlic

  • 350g turkey breast, roughly diced or minced

  • 3 rashers smoked streaky bacon, chopped

  • Salt, freshly ground pepper

  • Half teaspoon crushed chilli flakes

  • 2 level tablespoons grainy mustard

  • 1 tablespoon Worcester sauce

  • 1 rounded tablespoon mango chutney

  • 2 tablespoons, possibly more, of grapeseed, groundnut or vegetable oil

  • 6 English muffins or burger buns


Put sausage meat into food processor with spring onions, diced turkey breast, bacon, salt, pepper, chilli flakes, mustard, Worcester sauce, mango chutney. Whizz until coarse mince. If using mince, mix by hand. Shape into 6 patties. Fry gently in hot oil. when golden brown, turn over and cook for 5 minutes. Place in buns with choice of relishes.
